Cod With Asparagus in Parchment Paper
SERVES ONE (420 calories per serving)

1, 8 oz cod fillet
10 asparagus spears, last two inches cut off – cut these into quarters (lengthwise)
1 Spring onion, sliced up to green part
2 T of basil, cut into a chiffonade
1 tsp garlic, minced
1 1/2 tsp ginger, minced
2 T tamari
1 ½ T coconut oil, melted (can use microwave for 20 seconds)
Cracked black pepper (optional)
Parchment paper

INSTRUCTIONS

Preheat the oven to 425°F. Set one large pieces of parchment paper on a baking tray.
Set the piece of cod onto the piece of paper. Place the asparagus right on top of the piece of fish. Do the same with the spring onions. Top with, basil, garlic, ginger, soy sauce, and coconut oil. Crack some black pepper if you like.

Close up the parchment paper to make one little package. Bake in the oven for 10-12 minutes or until fish is cooked through and asparagus is tender (but not overcooked!).

Transfer your fish and some of the sauce to a plate and toss the parchment paper in the garbage.
