Happy Belly Porridge

Guest Chef Selva Wohlgemuth introduces us to her morning ritual – Happy Belly Porridge. A beautifully presented morning bowl of warm happiness for your belly!

SERVES ONE (360 calories per serving)

INGREDIENTS
1 ½ T chia and flax seed mix
¼ cup gluten-free rolled oats
1 pinch of sea salt
½ teaspoon ground cardamom (or more depending on how much spice you like)
1 cup water
¼ cup milk (dairy or non-dairy)
¼ cup full fat plain Greek yogurt (favorite brand Fage)
2 tsp organic maple syrup
¼ cup full fat plain kefir
½ cup frozen blueberries

DIRECTIONS

Pulse chia/flax seed mixture in a coffee grinder or with a mortar and pestal. In a small saucepan add the oats, chia/flax seed mix, sea salt, cardamom, and water. Heat over medium, and stir frequently.

Meanwhile, prepare you breakfast bowl by placing the yogurt into the center. Also place the blueberries into the microwave and heat for about 1 minute.

When the porridge mixture has thickened somewhat, add the milk, and cook until desired consistency.

Pour the porridge around the center yogurt. Then drizzle with maple syrup and pour over the kefir, covering the entire top surface.

Carefully pour the blueberry liquid in a circular fashion over the porridge and spoon the berries into the center. Enjoy!

Note: You can use any spice you like in this porridge, I just recommend trying something different than cinnamon-you might just find your new favorite flavor!

Cooking Tip: Chia seeds are high in soluble fiber that when mixed with water becomes viscous, helping to bind the oats and the flax seeds, creating a porridge consistency. Since they are cooked this occurs quicker than if you place the chia seeds in cold water.
