Fermented Bean Paste

Use as a perfect base for Mexican or Asian dishes. Because it is fermented, it will last (almost) forever in the refrigerator.

Serves: 4-6

Timeframe: 3 days

 

3 cups cooked black or pinto beans

1/2 small onion, chopped

3 cloves garlic, minced

3 tsp sea salt

1/4 cup whey

 

INSTRUCTIONS

Place onion and garlic in a food processor and process until well chopped. Add remaining ingredients and process until smooth. Place in a quart sized mason jar, leaving 1 inch of space between the top of the beans and the top of the jar. Cover tightly and leave at room temperature for 3 days then refrigerate.
