This Wednesday you’ll start the Week Four Meal Plan. Take a look at the meal plan, instructions, and recipes today. Skim through the shopping list and tick off what you already have on hand. Then, shop for the Week Four Meal Plan tomorrow, so you’ll have the freshest ingredients on hand for the week ahead.On the meal plans, (recipe) indicates that you will prepare this meal from a recipe. If a fresh leftover serving is used at a future meal, this is noted by (leftover) and if from the freezer, this is noted by (freezer). At the bottom of each recipe, you will find information on suitable substitutions and how to divide the recipe and store it for future meals.

This week we’ll explore a few squash recipes – using zucchini as pasta in a Mason jar salad recipe and pesto ‘pasta’ recipe. Butternut squash beautifully balances cannellini beans in a soup and roasted acorn squash blends with pomegranate seeds and roasted beets to make a beautiful salad!
