SERVES EIGHT (100 calories per serving)

1 cup raw cashews

1/2 cup water

1 1/2 lemons

Pinch of sea salt

 

INSTRUCTIONS

Soak 1 cup cashews for 2-3 hrs. Rinse well.

In Vitamix, add soaked cashews, about ½ cup water (little more if needed for texture), juice from 1 1/2 lemons and the pinch of sea salt.

Blend well on high until consistency of sour cream. Refrigerate to solidify more
